World Water Day has been held on March 22 every year since 1993. It celebrates the life-giving water sources that many of us take for granted, while raising awareness of the two billion people living without clean or safe access to it.

One of the UN Sustainable Development Goals calls for universal access to safe water and sanitation by 2030, so it has never been more important for us to take concrete action to tackle the global water crisis.

The theme for World Water Day 2022 is groundwater – the water found underground in aquifers (porous rock), which can be extracted to the surface using pumps and wells. Groundwater supplies a large proportion of the water we use for drinking, sanitation, food production and industrial processes, but overuse is leading to the depletion of this vital resource.

As a result, the World Bank predicts that by 2025, two-thirds of the world’s population will run short of fresh drinking water. Reducing water consumption is a shared responsibility and, as a business, it’s important to have a strategy in place.

How can businesses reduce water consumption?

To achieve universal access to safe water and sanitation by 2030, we need to drastically reduce our water consumption to protect and harness existing natural water resources without depleting them. So how can you reduce your business’ water consumption?

Electrolux Professional has joined as a partner to 100% Circular, an innovation program initiated by White Guide and Stockholm Gas in order to support sustainable development in Sweden’s restaurant industry. 100% Circular is a nationwide program where all restaurants, bars and cafés have been invited to nominate ideas that can convert the business to the circular economy. The winning proposals have been chosen in three categories; Innovation, Holistic approach to sustainability and Guest experience.

The innovation programme covers the whole of Sweden and, during the autumn, restaurants, bars, bakeries and cafés in the hospitality industry were invited to send their proposals of new ideas for the circular economy. The submitted ideas covered everything from digital solutions, energy savings, cost-efficiency, earth quality, recycling, food waste and beverage handling – to the relationship between food producers and restaurants.

Among the more than 30 entries from various parts of Sweden, the 100% Circular jury selected the ideas that they judged best fitted the programme’s criteria, with their focus on various aspects of sustainability and the circular economy – a nationwide recycling of wine corks, a model for agriculture within planetary boundaries as well as eating experiences which are part of the circular system.

The criteria for winning the prize and to receive innovation support were that they must be relevant to the global sustainability goals of Agenda 2030, display scalability and have great enough potential to have an effect and be able to be disseminated in the restaurant industry, as well as to consumer values and the food system in a larger perspective. The ideas must also have the potential to be realised in the short-term.

“We at Electrolux Professional are actively working towards innovation for sustainable development and 100% Circular provided a great opportunity for us to contribute with our expertise to accelerate the transition towards a circular economy. The initiative received many brilliant ideas that all show the importance of sustainability in hospitality” says Viktoria Roos, Open Innovation Leader at Electrolux Professional.

 

The winning proposals are rewarded with innovation support by experts from research and academia, and the first ideas will be realized in the spring of 2021. Electrolux Professional is participating in the development of the program and with expertise in the program’s Advisory Board.

Creator: Agneta Green of Oaxen Krog & Slip.
Jury’s motivation: This idea really focuses on a natural material that is used daily in restaurants and homes around the world and is often thrown in the garbage. The idea, aided by innovative solutions, produces large and small lifecycles to collect and recycle the material into traditional and new products.

 

The 100% Circular prize in the category Holistic Approach within sustainability is awarded to the project Experiment 2000 m2.

Creator: Niklas Karlsson, Rosendals Trädgård, Stockholm.
Jury’s motivation: Creating a dynamic model for how to grow food and eat within planetary boundaries. 2000 m2 is the most practical example showing how the food system must change according to research and science. The model is scalable and can be applied anywhere in the world.

 

The 100% Circular prize in the category Guest Experience is awarded to the concept NPK meals.

Creator: Patrik Sewerin, Gunnebo Slott, Mölndal
Jury’s motivation: An innovative and enjoyable way of explaining the role of individuals in a grocery-producing eco-system. It uses the eating experience as a tool to combine learning and enjoyment and, in this way quickly get people to understand the effect of nitrogen (N), phosphorous (P) and potassium (P) on the circular economy, and the vital link between earth quality, produce and taste experience.

 

The jury consisted of several of Sweden’s most innovative chefs and sustainability experts possessing deep knowledge of the circular economy and gastronomy. The jury has been supported by advisers and other experts in the circular economy, sustainable development and in other areas depending on the nature of the idea.

100% Circular is a sustainability prize and innovation programme that actively promotes, supports and coaches renewal projects from idea to realisation within six months. The lessons learned are followed-up and disseminated for the purpose of inspiring more restaurants to innovate and transition to the circular economy. The programme will support the sustainable development of Sweden’s restaurant industry and was developed in 2020/2021 by White Guide, Stockholm Gas and Electrolux Professional, in cooperation with Ideon Innovation and RISE Research Institutes of Sweden and the Restaurant Academy.

We don’t have a crystal ball. But we do know that change is likely as the world comes out of the corona crisis.
So, what trends could impact the hospitality industry in 2020 – and as a result – influence our business?

1. Eating ‘out’ at home – growth of delivery, take-away, and drive-thru is here to stay
It’s an example of a shift in customer behavior that has developed due to the pandemic and is likely to become permanent.

The hospitality industry was undoubtedly one of the hardest hit by lockdown measures, with consumers forced to stay away from restaurants, cafes and bars. Yet, while staying home, consumers still wanted to eat ‘out’ and there’s talk that the resurgence in take-away is here to stay.

“This higher level of comfort will remain and translate into greater long-term use of foodservice delivery services and an increase of delivery as a percent of total foodservice sales,” writes QSRweb in this article entitled Covid-19 will forever change the foodservice industry.

And it’s not only quick service restaurants we’re talking about.

Sure, we saw chains adapting as the pandemic spread – opening for delivery only. Yet, we have also seen the likes of Denmark’s celebrated Noma reopen as ‘the world’s fanciest burger bar.’

Wannabe guests that normally would have spent months to get a table can simply drop by and pick up their ‘McNoma’ curbside in a safe, socially distanced manner.

Whilst it’s probably unjust to label this experience as fast food – the boom in delivery-take-away-drive-thru culture is a travesty, according Dan Barber, renown US chef, restaurateur and a champion of the farm-to-table movement.

In Time magazine  he comments: “The world of processed Big Food was about to fall apart… now there’s a return to efficient food – food that you can eat without thinking about it. That, to me, is a disaster.”

Some are asking the question, can fine dining rise to the take-out occasion? That’s to be seen and is likely to require better packaging that can better maintain the right temperature, moisture and presentation of quality produce.

The QSR world could start to speed this up now. “Operators have been reluctant to use higher-cost take-out packaging because they feel they can’t pass the cost along. Consumers are about to demand it and may now be willing to pay for it.”

And, as restaurants are beginning to reopen again, guests should expect a trimmed-down menu, as mentioned here in foodandwine.com – quicker service, most profitable dishes and inventory savings with a focus on items that require fewer kitchen staff.

2. Goodbye buffet breakfasts, hello laundry pros – the rise of germaphobia
After the epidemic, customers will pay more attention to hygiene, sanitization and disinfection and this will impact their choices of restaurant and hotels.

According to EHL Hospitality Insights, it requires a back to basics approach: “To strictly follow HACCP and promote the importance of hygiene within the organization, creating a ‘safe’ image of the hotel’s F&B offerings.”

This food-safety-first mentality could go so far as seeing the sad demise of the hotel buffet-style breakfast and, alas, sharing-size portions.

Consumers are also expected to be more hygiene sensitive during hotel stays, for example, which is good news for the Professional laundry business.

Even outside the hospitality arena, segments such as hairdressers and kindergartens are having to adhere to new governmental hygiene regulations, meaning the use of household washers and dryers is nigh.

Within the healthcare sector especially, the advent of Covid-19 has surged interest in the barrier washing concept at a time when the need for decontamination and eliminating cross-infection is huge and immediate.

In terms of commercial laundries, hospitality and related segments must shift gears in terms of hospital-grade sanitization and face a future assuring consumers that their facilities are safe.

In the future, laundry services could well be outsourced in greater number than today with more stringent, expert cleaning requirements, as predicted by Sacha Wien, Managing Director of Schneidereit, that outlines how incoming orders of laundry rentals have soared during the pandemic.

3. ‘Low-touch’ tech and ‘new norm’ innovation
With health and hygiene front of mind, consumers will be looking for low-touch and even touchless experiences in their everyday.

Chains and quick service restaurants have already shifted towards touchscreen technology while hotels have adopted mobile check in, but the next step is to innovate towards a more automated, touchless experience.

For the hospitality industry, it’s a daunting task to “re-establish trust with the public,” as discussed in this World Economic Forum article where technology and innovation must play its part.

“Consumers are afraid and they ideally don’t want to see anyone touching their food,” states the article Covid-19 will forever change the foodservice industry. “The number of people working in a kitchen is unfortunately linked to consumer’s perceptions of food safety and sanitation risk.”

For professional kitchens and commercial laundries, it’s challenging to consider a future of touchless solutions, but employers will be forced to have a stronger duty of care to protect the health and safety of operators.

Even in the stress and heat of a kitchen, there’s talk of the need to create new technologies to streamline operations and ensure safe physical distancing for workers.

What can be seen is a future where the hospitality industry is open to a higher level of collaborative innovation to develop and test new game-changing solutions in the wake of Covid-19.

The trend towards regional farm products opens up a new application segment for Electrolux Professional: high-quality professional dishwashers that meet the highest hygiene standards.

Swiss researchers at the Lucerne University of Applied Sciences and Arts recently investigated how everyday life in corona times affects people’s consumer behaviour*. From the results of their survey, the scientists concluded that many people would want to eat healthier in the future and are also paying more attention to the regional nature of food. The changed behaviour could reinforce the trend towards farm shops – not only in Switzerland, but also in Austria and Germany.

Yoghurt and drinking milk are among the popular farm products. But producing and marketing dairy products themselves has so far been viewed with scepticism by agricultural dairy farmers. After all, the most important question facing farms is: How can farm products such as drinking milk or yoghurt be packaged in such a way that they meet the high hygienic requirements of food safety?

Electrolux Professional looked into this possibility after the company received a request from the agricultural sector. The company recently carried out the practical test:

“The results are convincing across the board”, says Auke Faber, Product Manager DACH Food Service at Electrolux Professional, and explains: “Even when milk and yoghurt residues have dried up, our dishwashers manage to rinse the glass containers completely clean and, thanks to the 90 degree hot rinse temperature at the end of the process, ensure maximum hygiene for the glasses”.

 

Electrolux Professional prepared milk bottles for the test as well as small and large yoghurt glasses with milk residues that dried up after a certain time. The testers left half of the jars for three hours, the other half was dried for five minutes at 120 degrees. The glasses were washed in an Electrolux Professional Green&Clean hood-type dishwasher and in an EUCIADD dishwasher. Both dishwashers have the feature of a 90-degree after-rinse temperature.

The result of the test was “highly positive“, says Auke Faber. The large milk bottles with a height of 260 mm and an opening diameter of 45 mm were rinsed hygienically clean in a time of 14 seconds after 10 or 15 minutes at 64 degrees Celsius and a rinse with 90-degree hot water and also showed no residues of detergent. The tests with the large yoghurt glasses (125 mm high and 60 mm opening diameter) as well as the small glasses (90 mm high and 47 mm opening) achieved the same result. The former were rinsed for 10 minutes, while the yoghurt glasses, which had only been standing around for three hours, took only 5 minutes.  The rinsing process with 92 degrees hot water lasted 14 seconds for all glasses.

Electrolux Professional now plans to specify its farm dishwasher solutions and distribute them in the new application segment.

Barrier Washers 

The concept of barrier washing is to build a barrier to separate the dirty zone from the clean zone, to avoid any physical contact or linen contact between the two zones, in order to avoid spreading harmful microorganism and cross contamination. It is not only implemented in the laundry room, instead provides a holistic approach from dirty bed to clean bed. The transportation and storage of linen should be strictly controlled to ensure that the linen used by patients and medical workers is clean, sanitary and sterile.

Real-time monitoring and traceable high temperature disinfection function

There are three kinds of standards of high temperature disinfection: 93℃ for one minute, 71℃ for three minutes and 65℃ for ten minutes.

Electrolux Professional Barrier Washers meet the requirements of the three standards.  It has three features to ensure thorough disinfection and prevent cross-contamination:

  • Provide standard procedures tocontrol the washing process and time,to ensure compliance with legal hygiene standards;

HACCP: Comply with RABC standard

HACCP is an internationally recognized system for reducing the risk of safety hazards in food and medicine, RABC is the equivalent to the laundry industry.  In many cases, contaminated linen or clothing can also cause microbial damage and cross contamination to food and medicines. They both work hand in hand to ensure that laundry and clothing do not cause microbial damage and cross contamination to food and healthcare.

In order to guarantee the maximum hygiene, it is important to choose the right washers and ensure the safely control of the microbial, chemical and physical hazards in the laundry process.
