Crete, one of the largest islands in Greece and one of the most popular destinations in the world, with the rich history and folk tradition of the island, the internationally known Cretan cuisine and hospitality, emerald beaches and beautiful landscapes with traditional settlements, are some from the elements that compose its unique character.

Specifically, in the Katharades area of Ierapetra, in the Prefecture of Lassithi, is the 5 * luxury resort Ostria Resort & Spa with a capacity of 1200 guests that operates seasonally (7 months out of a year), which offers high quality services that aim to meet every need of each visitor promoting at the same time the unique Cretan hospitality.

Executive Chef Manos Kokolakis in charge of the food service department of Ostria Resort & Spa for the 3rd consecutive year, from a very young age had the dream to become a Chef and to this day he loves what he does. He started his career in 1997 after graduating from Cooking School, he has enriched his knowledge in Greece working in various hotels, using new technologies and systems e.g. sous vide, HACCP, etc.

Under its supervision, a staff of 40 people, which serves the needs of the 6 themed restaurants Orion Main, Thalassa Sea Side, Vathypetro Wine & Grill, Maestro Traditional, Aeolus, Theatro Pool of Ostria Resort & Spa, as well as the other restaurants and offer among other unique gastronomic pleasures and experiences with dishes based on Mediterranean cuisine – traditional Cretan cuisine – creative Greek cuisine – international cuisine. 1200 meals, 3 times a day (all-inclusive hotel) and with a menu that is constantly updated according to the needs.

After the recent renovation of the hotel, the kitchen area was equipped with a 170-liter thermaline pressure electric braising pan for the needs of the hotel, following a suggestion by the owner Mr. George Tzarakis, the new top oven SkyLine, and other Electrolux Professional equipment.

High performance, maximum productivity, unique quality results, fewer man-hours, economy, speed (cooking time) and infinite possibilities offered by the therma pressure braising pan, are the main reasons I use it 7 days a week“, emphasizes Chef Manos Kokolakis.

There are cases like last year when at the same time Ostria Resort & Spa offered over 2000 portions at an event at the hotel, a catering event in the village, as well as to the visitors of its a la cart restaurants, based on the cook & chill system and the Electrolux Professional other appliances and solutions.

Chef Manos Kokolakis’ discussions with Mr. Tzarakis on issues related to the continuous renewal of equipment, especially when this is the result of new technologies that offer desirable functions, result in their fast implementation.

The philosophy of the hotel is fresh products, fresh fish, fresh vegetables and fruits, which we procure ourselves daily from local markets as well as from local greenhouses in Ierapetra.

The presentation and taste of the dishes is based on the human factor especially when the Chef tries to develop his techniques through new technologies, and when there is the right machine to complete the creation of the Chef, then the result is very satisfactory to the chef, to the management and especially to the visitor “, emphasizes the Chef Manos Kokolakis.

The hotel operates at 35-40% max due to the pandemic, so that it is able to offer high quality services with priority on health and safety. Note that 100% occupancy (1200 people) means that not only we but also the customers must manage the distances and the rules of health and safety, for that reason the decision was made for limited occupancy.

Ostria Resort & Spa is not reminiscent of the classic all-inclusive hotel. The logic of recreating new dishes from everyday meals does not exist. Every day we offer new dishes and options. Especially during the pandemic that we have been living for months, although our buffets are half full (and in fact with additional protection for safety), we offer top dishes and service to each visitor trying to make his visit an unforgettable experience.

Providing security to guests through daily feeding was not a difficult task for us at all. Gastronomy is not bothered by the pandemic. It is difficult for us what we just want to present only. We have always had spotless kitchens and we always operate according to HACCP standards. We maintain hygiene and safety in our premises using gloves, masks, keeping distances as much as possible, continuous disinfection, etc. For us it was not something new “, emphasizes Chef Manos Kokolakis.

The next day in the restaurant business remains difficult because it is difficult for us to present our work through windows. We must all work together to overcome the difficult days we live in, so that we can offer what we have been trained for and what we really want to deliver. It’s unfair to fight with your team all day to sample only your potential. Many companies have a problem with the pandemic. Despite its relatively small size, Cairns has a number of quality hotels and resorts which take advantage of the water views to the south and east and the rainforest clad mountains to the north and west, with visitors usually coming to see one thing – the iconic Great Barrier Reef.

The only 5 star hotel in Cairns to have retained its brand since it was built 33 years ago, the Hilton Cairns has earned and maintained its reputation on its high standards and attention to detail. And with 263 rooms comprising a mixture of standard rooms, ocean view rooms and suites, together with substantial conference and catering areas plus bars and restaurants, it’s an immense task that keeps the team of 120 staff busy all year round.

Almhof Hotel adds a sparkle to their dishes with the new green&clean Rack Type

Nestled between the mountains of Austria, Italy and Switzerland, 1,400 meters above sea level on the Reschen Pass, Almhof hotel leaves nothing to the imagination. Guests will experience the warm hospitality, the romantic atmosphere and the gourmet cuisine in the various restaurants and bars. They can choose from an intimate candlelight dinner of culinary delights, a tasty Italian cuisine at the Noble pizzeria, local specialties at the Tyrolean parlor or the pleasure of tasty fondue at the Almhof fondue parlor. In more than 30 years of hospitality, Almhof has undergone numerous renovations. Many directly visible to the guests and others in the background. One of the latest was the installation of the new Electrolux green&clean rack type dishwasher.

“The investment in a new dishwasher was already in the pipeline since the “old” machine had been installed in the kitchen more than 25 years ago”, commented Hotel Manager Mr. Alois Kröll. “Our dishwashing area works around 6-8 hours each day.”

“The main target was not only brilliant results, but also the environment in the kitchen especially for the staff when standing in front of the machine. To invest in another Electrolux machine needed no discussion, the previous machine worked well over the years and the service in our area is excellent. Since we installed the new machine, there hasn’t been a single down day, sure we had some failures but we could always work with peace of mind, knowing that the machine would do its job continuously and hygienically.”

“The hotel is only closed for a short time during the year, we are no longer the traditional seasonal hotel. More often, we are fully booked all year long.
We serve around 600 meals per day, divided between breakfast, lunch and dinner. Throughout the day, each of our guests uses up to 10 plates for the different courses. During dinner, there are 1200 pieces to wash not considering glasses and cutlery. Only a powerful machine can do this type of workload in little time. This is why we chose Electrolux”, concluded Chef de cuisine Markus Ritzzi.

A.Roma Lifestyle Hotel, word of the day: efficiency!

The A.Roma Lifestyle Hotel project began back in August 2014, when the Electrolux Professional agency Fialco Srl was asked to realize, for the restaurant area, a layout for different cooking stations (“zoning”) according to the indications of the Taiwan properties of the LDC Hotel Resort group. Months of meetings, comparisons and new projects followed until everything satisfied their indications.

Today, the result is in front of everyone’s eyes: a main kitchen for basic preparations, 10 independent show cooking stations, a kitchen dedicated to events and banquets in the conference area and a real pastry and bakery laboratory of approx. 100 sqm.

11 months for the construction, approx. 600 m3 of equipment, 9 lorries and numerous other trucks. The installation took 60 days, with specialized technicians working from 5 to 11 hours/day for a total of about 2200 hours including assembly and assistance during the opening: an intense program which required extremely hard work in order to deliver all the areas in time.

Taking a closer look, the real peculiarity of the restaurant is the 10 open kitchens, all independent, alternating approx. forty chefs.

The particular customer requests created the need for equipment targeting unique solutions such as: the steam pressure oven, for cooking dumplings at the Chinese station, the 2.2 mt long chrome-plated fry top for the Teppanyaki area, the powerful gas wok for the Asian area, the induction wok to finish the pasta and a large 2-deck pizza oven for the Italian station.

Each show cooking area is prepared for service to the customer with the brand new drop-in appliances, the evolution of self-service, characterized by hot and cold showcases perfectly embedded in custom-made furniture.

Now about the “Laundry”!

A.Roma Hotel decided to create its own internal laundry to meet the needs of a modern hotel spa.

The dedicated area was organized to perfection with 2 washing machines, 20 and 11 kg, one used exclusively for washing mops; an 18kg dryer and two ironing boards.

Internally they process about 150 kg of laundry per day between the spa towels, curtains, pillows, duvets and staff uniforms.

This choice allows to directly control the wash cycle and monitor the process: you are sure of what you do, how you do it and the products that you use.

If, for the hotel, having an internal laundry extends the life of the towels and reduces costs, for the guest this translates in to having perfectly sanitized bathrobes and towels, soft and fragrant, worthy of a luxury hotel.

Le Méridien hotel has accredited the Tandoor Concept by Electrolux

Chef Davinder Kumar, Vice President F&B Production & Executive Chef at Le Méridien New Delhi, is amongst the luminaries of the Hotel Industry in India. As President of Indian Culinary Forum, he has accredited the Tandoor Concept by Electrolux for its innovation and perfection after studying the Concept and post an exclusive demo for ICF members at the Centre of Excellence, Gurgaon.

Electrolux Professional was able to experience his excellent kitchen planning skills during the two-phase kitchen renovation and refurbishment of the fine-dining restaurants and bars at Le Meridian New Delhi.

Le Méridien New Delhi awarded Electrolux the kitchen renovation for their bars and Restaurants, namely eau de Monsoon – the contemporary fine dining restaurant serving authentic Indian food, Nero – the exquisite bar serving the world’s finest spirits with exotic snacks, The One – Le Méridien’s stylish all day dining for international cuisines, and the warm & welcoming Longitude –a coffee house by day with a skilled barista crafting signature coffees, and a wine-inspired setting by night.

The kitchens of the restaurants & lounges have been suitably equipped with a full range of Electrolux equipment, i.e. air-o-steam combi ovens, 800 mm & 1200 mm modular cooking ranges with Panini grills, fryers, griddles, pasta cookers & fry tops, top-of-line refrigeration, and dishwashers (under counter, hood type, glass washers & rack type), and also the mobile Libero unit for front cooking and elaborate gala banquets.
