The Fuscaldo family has a long and rich history in the Australian foodservice scene spanning more than half a century. Arriving in Australia in the 50’s as migrants, Giovanni a plumber and Lucia Fuscaldo a tailor, embarked on a courageous voyage that would take them from Rome to Melbourne – and the new life that awaited.

Lucia was a brilliant cook and the word spread quick amongst the Italian community. A side business was started making fresh pasta and sauces from their humble home kitchen to meet the growing demands for authentic Italian cooking. This side business eventually grew and by 1964, the Fuscaldo family opened their first fresh pasta retail shop in Melbourne.

Today almost 60 years later, the next generation of the Fuscaldo family are keeping that tradition alive, managing their ever growing portfolio of food business with passion and innovation.

Café Gigi is the latest Fuscaldo eatery, centrally located at the iconic Circular Quay which is always a bustling hub for tourists as well as locals. The newly opened Café boasts a backdrop of the Sydney Harbour Bridge, with all-day barista style coffees, freshly baked pastries. Offering a scrumptious breakfast menu from 7am-11am and a lunch menu from 11am till late.

You can order a variety of food and drinks from Nonna’s Bread (which is Banana Bread served with Ricotta cream) for breakfast to a cold beer with Fish Tacos or classic Italian favourites paired with cocktails over lunch.

Inside Café Gigi is an Electrolux Professional cooking line up comprising of 4 powerful induction burners, a flat grill, and a salamander. The kitchen design is super compact in footprint but high in performance and used daily to serve up the fresh and mouth-watering menu.

The Fuscaldo family have become well known for Portobello Caffe, Vizio Caffé e Cucina and Ragu just to name a few and hope to extend that success to Café Gigi.

Located in the heart of Arnavutköy and Moda, which are one of Istanbul’s most popular neighborhoods, Coni&Co, is the city’s best fried chicken restaurant, has begun its operations in 2019 and has become an irreplaceable place for crispy chicken enthusiasts.

Jordan Dupont, who is the creator of the brand, lived in Vietnam from 2010 to 2015, and says that one of his favorite meals during his stay in Vietnam was chicken wings. However, the wings he ate there weren’t exactly as crunchy as he wanted, and Koreans were doing it much better. Due to his fondness for palate and his passion for crispy chicken, Mr. Jordan desired to open a restaurant to serve a more crunchy version of the flavor he experienced in Korea when he returned to Turkey. Keeping its focus on the wings, he created the Coni&Co brand by adding crispy fillets and burgers to the recipes. Thus, the first chicken gourmet restaurant was born in Turkey.

“Crispy chicken is an ‘extremely chic’ meal all around the world. However, in order to consume this in the most accurate way, it must be consumed as soon as possible after taking it out of the fryer. Preparations must be “made-to-order”, that is, they must be made on order, because after the product is cooked, the rate of crispiness and juiciness decreases every second. In fact, when done using the right equipment with the right operations; product almost acquires a Michelin Star balance with the rate of its crispiness, juiciness and softness.”

 

The preparation process of the crispy chicken is very important. At first, they marinate the chicken, then perform the coating process consisting of flouring and spices. They cook the wing twice and chill in the Electrolux Professional Blast Chiller. And they make the coating sauce, the bread, everything themselves, they only buy the chicken from the outside.

“When opening the second branch, we decided to work with Electrolux Professional brand, which is The OnE solution partner which offers complete solutions to perform all the kitchen and service with a single brand. It was very important for us that the heat recovery feature of the Fryers were high as a Kitchen equipment. That’s why it was our primary preference to choose Electrolux Professional brand.”

The Museum of Contemporary Art Tokyo, which was reopened in March 2019. At the top of the spiral staircase in the middle, there is “Sandwich Upstairs”. There is an order counter and a kitchen in the center of the bright store where a lot of sunlight enters from large windows, and there are a lot of cozy tables and seats surround.

The concept of ” Sandwich Upstairs ” is “sandwiches, like picture frames”. Considering sandwiches as a picture frame in art, they propose to easily carry fancy food and eat it wherever you want. The ingredients of the sandwich are luxuriously sandwiched between breads, which is a hand-crafted dish that is like served in an authentic restaurant.

You can always choose a favorite hot sandwich between 8 to 10 kinds at the store. About 4 of their flavor change from day to day.

Since opening in March, ” Sandwich Upstairs ” have been featured in a lot of media and have become so popular that there are long lines of the customers on weekends. They sell 100 hot sandwiches a day on weekdays and 300 a day on weekends, so it is important to be quick to serve customers without waiting while paying attention to quality. There is no wonder they need a perfect cooking equipment which has the ability to cook more quickly, tasty and the simplicity that staff can operate without mistakes, no matter how busy the peak hours.

Electrolux Professional’s SpeeDelight is installed right inside the order counter. Customer can see the sandwiches which they just ordered are being cooked in front of them.
When the cooking with SpeeDelight is finished and the top cover is automatically raised, customers cheer. This is a popular moment for customers with children.

Le Monde, originally the winery of Villa Giustinian in Portobuffolè Italy, an ancient village, which in early 997 was already documented as a castle and river port of the Venetian Republic, is the only rural house still operational on the property of the Villa.

The winery has been in operation since 1700. Property of the Pistoni family for centuries, in 2008 it was transferred to Alex Maccan, who was able to bring it to the highest level of quality, transforming it into a reference model for the entire Grave region, one of the most quoted Italian regions for the production of quality wines.

Today, Le Monde is a new generation winery both in terms of technology as well as for what concerns the processing stages. In addition, 70% of the total energy needs of the winery are produced by solar panels.

However, if on one side the new property is focused on innovation, on the other it’s remained faithful to its history because “wine culture is tradition”. The contrast tradition-technology, present throughout the structure, is especially highlighted in the kitchen where the protagonist is a beautiful Molteni cooking island, shiny black enamelled with brass finishings. A made-to-measure block: size, cooking functions, finishings, nothing has been overlooked. Just like a tailored suit, the kitchen was designed and built according to the requirements of the Maccan family, adapted to the aesthetic and functional needs of the surrounding spaces.

The same care and attention to detail was also placed on the surrounding equipment: unique seamless worktops with elevated thickness, wall and base units organized for maximum storage space, recalling the color and finish of the Molteni island. Behind the Molteni block is an Electrolux Cook&Chill solution presenting the innovative air-o-steam Touchline combi oven. For the washing area, 4 Electrolux green&clean undercounter dishwashers were chosen, of which 2 wine-line models: the ideal solution for washing crystal glasses, thanks to the correct wash temperature (50-55°C), the inclined wire basket and the ideal combination of detergent and water treatment.

Not only tradition and technology, but also sustainability: the other common element between Electrolux Professional, the Maccan family and the winery. The sustainable approach, which in Electrolux Professional involves each phase of the product life cycle, from design to manufacturing, from installation to disposal, also characterizes Le Monde in its entire supply chain.
